World Malaria Day

Today is World Malaria Day

Never heard of this day, have you?

Well, now you have!

God gave me the privilege of serving Him in Africa on 4 different occasions as part of medical missions teams through Hands On Missions.  I saw, up close and personal, the devistating effects of Malaria on people throughout Africa and to be quite honest with you, it makes me sick!!!!!!!!!!

So much emphasis today is placed on AIDS/HIV and so little on Malaria.  Why is that?  I can think of several reasons.

1) Malaria is not a problem in the Western world, AIDS is!  Thus people are uneducated and uninformed about the seriousness of Malaria and how EASY it is to diagnose, treat and PREVENT!

Did you know that it costs $1.39 for an insecticide treated bednet that lasts 3 years!  It costs, $0.31-$1.40 for a course of ACT Malaria treatment and a rapid diagnostic test $0.50.  So, to diagnose, treat and prevent future infections of malaria for 1 person costs approx. $2.50... That is less than 1 basic coffee from Starbucks!  AHHH PEOPLE!

2) Treating Malaria, in the large scheme of things, involves cleaning up the dirt, grime, filth that penetrates Africa at it's seams.  It is much easier to fork out the cash to treat AIDS and say, 'we are doing our part' and go to bed feeling good about ourselves, than to look at the root of the problem.. Africa needs help!!  And no, not zillions of dollars of foreign aid thrown at corrupt political leaders..

So what can we do?  Here we are in the US/UK living our lives, buying lots of designer shoes, expensive cars, Starbucks coffee, fill in your blank....and....Um, now wait Haley, you buy drinks at Starbucks occasionally, isn't that a little hypocritical??

Is it wrong to buy coffee from Starbucks, wear nice clothes, and live in a nice house?  NO! I grew up in a big house.  My parents worked hard and God blessed them financially.  I remember having conversations with my parents about the fact that we lived in a big house and my mom said that God gave us a big house and that we were to use it to serve Him and others.  I can't tell you all of the times my parents volunteered to host a baby shower, church event, have our friends over, the list goes on and on.  Thre is nothing inately wrong with having things.  It is our hearts that we must look at.  Where our treasure is, there our heart will be also.  Do you feel like you 'need' those latest toys for your kids, or the newest gadget on the market?  What do you spend most of your time thinking about?  If you were to take a serious look at your checkbook, where is most of your money going?  Is 10% (at least) going to your church?  What about other offerings over and beyond your basic tithe??  Or do you feel like you just can't afford to give that much to God?  Let me tell you right now, if you challenge yourself to give that 10+% to God, you will find your finances falling in place, MORE money available at times and you will find your heart slowly changing as your realize the majority of what you thought you 'needed' you didn't need at all!!! 



Just think, one person started the organization that started this school which now provides education to this many people!!!  What difference can YOU make in this world!  They sky is the limit!!!



As I'm typing and thinking about what I treasure in my life I can't help but remember the worship services I attended in Malawi and Kenya.  I will tell you this.  The Christians I met in Africa put me to shame.  When they sing praises to God, they MEAN IT!  God provided them life that day and they shout their thanks to Him from the rooftops!!  When they cry out in despair and agony, you can feel it in your bones.  When they read the scripture, "Trust in the Lord with all your heart and lean not on your own understanding, in all your ways acknowledge Him, and He will direct your paths."  they aren't sitting in a nice warm church building with their Sunday finest on, they are sitting over their sick/dying/hungry child and clinging desperately to the fact that there is a God out there who hears them and who will never forsake them even though there is no medication, no food and no hope for survival.  When the woman hiding out in the treetops prays that she will be safe while she is sleeping because she knows that she could be raped that very night, there is no questioning God, no putting God off till tomorrow or when religion is more convenient for our lives.  I'll tell you one thing, God doesn't promise us a long life.  We could die tomorrow.  Are you ready for that reality?

So, what can we do?  What can we really do to make a difference in this massive heap of hopelessness?

To answer that question would take me days of writing, but I will post one tangable thing you can do today.

My family sponsors orphans through Hands on Missions Africa.  HOMA clothes, feeds, and cares for their orphans in Sierra Leone, Malawi and Kenya.  They also provide necessary medical treatments, education, everything needed for physical survival.  More than that tho, they give them what they need to MORE  than just survive their lives, they instill in them hope, found in Jesus Christ, that they are NOT alone, they ARE loved and there is NO SUCH THING as an orphan in Christ's eyes.. We are all sons and daughters of a King, and not just any king, the King of Kings!!

Some of you may be reading this and thinking, yeah yeah, she's just a bleeding heart.  We've heard this before..

Then I would challenge you not to just hear the words I'm writing, but act on them.  Most of us could go to our closet, sell some things and make enough money to sponsor an orphan for an entire year.  How many of us would actually miss $30.00 a month in our paycheck?  What a great opportunity it would be to plan, with your children, an area where you can purposefully sacrifice something in your life to put that money towards sponsoring an orphan.  What an amazing example that would set for your children!! Wow!  Talk about faith in action.

My mother-in-law always says that we are to be "Jesus with skin on".

I choose to step out, in faith... no turning back.. will you do the same?

Recipe: Honey Sesame Chicken (Bourbon Chicken)


Honey Sesame Chicken 
(Tastes like Bourbon Chicken, without the bourbon)

Ingredients:
1 pound boneless, skinless chicken breasts (Natural or organic)
1 cup honey (organic)
1/2 cup Teriyaki Sauce
1/4 cup ketchup (organic)
2 Tbl grapeseed oil
2 cloves garlic (minced) (organic)
1/2 cup diced onion (organic)
1/4 tsp red pepper flakes
cornstarch (for thickening)
sesame seeds
salt and pepper
  **I noted the changes I made to the recipe to make it healthier in ( ).  For example, I use grapeseed oil in my house but the actual recipe calls for vegetable oil.  It is up to you!  Because we live in the country, it is really easy to get affordable organic fruit/veggies/meat at the local English farms and stores but you choose what works best for your family and budget.**


Directions:
1)  Place chicken in crock pot and sprinkle with salt and pepper.

2)  In medium bowl, combine honey, teriyaki sauce, ketchup, oil, garlic, onion and red pepper flakes.  Stir well to combine. Pour over chicken in crock pot.

3)  Cook on low for 3-4 hours or on high for 1 1/2 - 2 1/2 hours.

4)  When done remove chicken from crock pot and cut in cubes.  Combine cornstarch and water and whisk into crockpot to thicken sauce.  Put chicken back into pot and stir to recoat chicken.

5) Serve hot over rice and sprinkle sesame seeds on top.  



Rating:

Bryon- 8.5/10- Bryon really enjoys this.  There's nothing really unhealthy in it (Teriyaki Sauce being the only really unnatural ingredient), so I pile his plate high with the chicken mixture and whole grain rice and I have one happy and very full husband. 

Haley- 8/10- This is so easy to make and tastes super good.. This is a definite in our meal rotation schedule.  It's especially great that the kids like it so no coaxing them to eat it.  This particular day I served it with carrots as a side since no veggies are worked into the main dish. It has so much flavor even satisfies your sweet craving (with the honey) so you aren't tempted to get a desert afterwards

Rapeseed Fields in Bloom

 On our drive home from Church today, God decided to bring out the sun to show off these beautiful fields..Talk about bragging rights! What beauty!


We drive for 10 minutes through these Rapeseed Fields to get to the closest town, as well as the base and our church. 


This is the East of England.  Miles and miles of farm land with nothing as far as you can see.  Fortunately, most of the farms around our house are rapeseed (which is harvested and made into Canola Oil) or wheat.  Wheat isn't nearly as pretty and brings around annoying little wheat bugs during harvest season... Yuck! 

 This is a little footpath through the rapeseed fields.  We were still in our "Sunday clothes" so we didn't go far.  We will be back though!  Best time of year for walks!

Wicked, in the West End

 Getting ready for my birthday date with my handsome hunk-of-a husband.  All gussied up in my new birthday outfit, compliments of my fashion diva friend, Gabby.  And showcasing my '30' button, just so that EVERYONE knows I'm 30 :)  


 Here I am on the train to London.  Bryon was so fantastic planning this date night.  He got off work early, went to the train station and bought our tickets, the parking pass, everything!  The theater tickets were bought, dinner reservations made, train/underground schedules figured out, everything taken care of!  All I had to do was sit back and relax.  I don't have to tell you mommas out there that it is a rarity having no responsibilities looming over your head.  No one to look after or worry about.  Forgot what that even felt like, until tonight!!


 As soon as we got off the underground, there was the Apollo Victoria theater with this huge "Wicked" sign out front.  Thats the way to make a statement!  


We had dinner at a fantastic Turkish restaurant called, Kazan, which was a 10 minute walk from the theater.  It was sooo good!!  We both started off with Pomegranate Mohitos, yum!  This meal/restaurant had us reminiscing big time about our trip to Turkey a couple of years back.  Definitely our favorite family trip since living in the UK.  You could order pomegranate juice cheaply anywhere and there was trees bursting with fresh pomegranates everywhere! 

 
 We had the 'Pre-theater Dinner Menu" which was an appetizer sampler and then a main course.  This is the sampler platter.  I didn't know what most of the things were but we just ate and enjoyed.  I had a vegetarian entree which was out of this world good and Bryon had a meatball and vegetable dish which was good too (but not as good as mine!!!)  We ended the meal with baklava and ice cream and Turkish delight was given as the finisher for the meal.  I highly recommend this restaurant if you plan a trip to see "Wicked" and are looking for a meal that is out of the ordinary.


Dinner was over, we were both so full and worried we might fall asleep during the show, when all of a sudden it starts and wow!!  No way we are falling asleep, thats for sure!  It was really neat the way the theater was turned into the Emerald Palace and everything was green at several points during the show.  

For those who don't know, Wicked is the untold story behind the witches in Oz.  It shows how the wicked witch of the East and West and the good witch, Glenda, met and became acquainted with each other and showed totally different sides to each of them than what is portrayed in "The Wizard of Oz".

The show is over and it was great!!!  Highly highly recommend this show to anyone thinking of hitting the London theater scene.  It wasn't voted best West End show for 2 years straight for no reason!  I was spellbound the entire time.  The plot moved right along, I was never bored or confused.  The actors(es) did a great job and the set and special effects were as good as any broadway show I've seen.  


I just want to say a huge 'THANK YOU' and "I LOVE YOU' to Bryon for giving me the most thoughtful birthday gift.  Those of you reading this most likely don't know that I've talked about wanting to take the train to London to see "Wicked" since we got to England.  I've heard sooo many good things about it and it is the one play I wanted to see while we lived in the UK.  I love you sweetie, thanks for making the special effort to make my 30th birthday one of a kind!!!

I'm 30!

I'm 30..

I don't feel any different.

Someone asked me if I'm dreading 30 as I'm not longer a "young adult" any more.  Apparently, I'm a full fledged adult now.

My reply was, "I've been a full fledged adult for ages!"  To be honest with you, I feel like I've lived enough life to be 40!

Someone else said that they loved 30 because they were considered mature enough to be taken seriously by other adults.  You opinion mattered more at 30.

Several people said, "30 is the new 20!"


So I thought I should reflect on my life at this point, see where I've been and where I'd like to go from here.  The outcome of the reflection was simply..

Happy Easter!

Welcome Spring in Cambridgeshire!  The rapeseed plants are in bloom and our allergies are through the roof! It is really beautiful this time of year though, all of the roads are lined with this gorgeous yellow flower/seed.  



 Happy Easter 2012!!!  These are late because we spent Easter this year home with a mean flu.  So, we took these pictures the week after Easter. Better late than never!!!
